In a large roasting pan, heat the olive oil and butter over medium heat until the butter is melted and shimmering. Add the potatoes and crushed garlic cloves in a single layer, ensuring they are not overcrowded. Season generously with sea salt flakes and freshly ground black pepper. (5 minutes)

Move the potatoes around in the pan, coating them evenly with the oil and butter mixture. Cook for 3 to 5 minutes, allowing them to brown slightly on one side. (5 minutes)

Transfer the roasting pan to the preheated oven and roast for approximately 30 minutes, or until the potatoes are tender and the edges are crisp and golden brown. (30 minutes)

For even cooking, choose potatoes that are similar in size.
If you don't have fresh bay leaves, you can use dried bay leaves, but the flavor will be more intense. Use sparingly.
Don't overcrowd the pan, as this will steam the potatoes instead of roasting them. If necessary, use two pans.
For extra flavor, consider adding a sprinkle of grated Parmesan cheese during the last 10 minutes of roasting.
