Prepare Your Pan: Grease a 9x13-inch pan with 1 teaspoon of butter. Set aside. (5 minutes)

Create the Cherry Filling: In a saucepan, combine granulated sugar, evaporated milk, and ½ cup of butter. Bring to a boil over high heat, stirring constantly. Remove from heat and stir in the marshmallows, cherry chips, and vanilla extract until everything is fully melted and combined. Allow the cherry mixture to cool slightly while you prepare the chocolate layer. (15 minutes)

Make the Chocolate Peanut Coating: Place the semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Add the peanut butter and the remaining 1 teaspoon of butter to the melted chocolate. Mix until smooth and well combined. Gently fold in the crushed peanuts until they are evenly coated in the chocolate mixture. (10 minutes)

Assemble the Bars: Pour half of the chocolate-peanut mixture into the prepared pan. Spread evenly to create the bottom layer. Pour the cooled cherry mixture evenly over the chocolate base. Top with the remaining chocolate-peanut mixture, spreading to cover the cherry layer. (10 minutes)

Chill and Cut: Allow the bars to cool completely at room temperature, about 30 minutes. For faster setting, refrigerate for at least 15 minutes. Once firm, cut into small squares (1-inch squares are recommended) and serve. (30 minutes cooling time)

For the best flavor, use a high-quality semi-sweet chocolate. Milk chocolate can be substituted, but the bars will be much sweeter.
If you don't have cherry baking chips, you can use chopped maraschino cherries (well-drained and patted dry) or dried cranberries for a slightly different flavor profile.
Store the Bing Bars in a cool, dry place in an airtight container. Separate the layers with waxed paper to prevent sticking. These bars are best enjoyed within 3-4 days.
