In a heavy-bottomed stockpot, combine the chopped plums and granulated sugar. Cook over medium heat, stirring occasionally, until the plums release their juices and the mixture becomes liquid, approximately 8-10 minutes.

Stir in the sea salt, ground ginger, chili powder, ground cloves, and ground cinnamon. Reduce heat to low and simmer gently, stirring frequently to prevent sticking, until the chutney thickens to your desired consistency, about 15 minutes. Taste and adjust spices as needed.

Stir in the white vinegar and cook over low heat, stirring frequently, for an additional 5 minutes to allow the flavors to meld. Remove from heat and let the chutney cool completely, around 30 minutes.

Transfer the cooled chutney to an airtight container and refrigerate. It will keep for 3-4 weeks.

For a richer flavor, consider using dark brown sugar instead of white sugar.
Adjust the amount of chili powder to control the level of spiciness.
Sterilize your jars for longer shelf life.
