Add vegetable broth, pinto beans, frozen cauliflower, frozen corn, oregano, cumin, pepper, and salt. Close and lock the lid. Select Soup function and set timer for 15 minutes.

Release pressure using the natural-release method according to manufacturer's instructions, for 5 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

Stir in sour cream. Ladle into bowls and top with fresh cilantro.

For a vegan version, substitute the sour cream with a plant-based alternative like cashew cream or coconut cream.
Adjust the amount of jalapenos according to your spice preference. Consider adding a pinch of cayenne pepper for an extra kick.
If you prefer a thicker chili, mash some of the pinto beans before adding them to the Instant Pot®.
Garnish with additional toppings like avocado slices, shredded cheese (if not vegan), or a dollop of plain yogurt.
