Marinate: Pour the lime juice over the vegetables and season with salt to taste. Gently toss to combine. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. (30 minutes)

Serve: Before serving, gently toss the ceviche again. Garnish with avocado slices. Serve immediately on tostadas, with crackers, or as a standalone appetizer.

For a spicier kick, add a finely chopped jalapeño pepper to the mixture.
Make sure not to overcook the cauliflower, it should still have a slight bite.
